I was desirous of a "bread" like something, that was dairyfree, glutenfree and not too sweet (so I could use it for spreading avocado) on it. Here is the recipe I came up with and I like it! It comes out a pretty golden color, cause of the orange juice. It uses rice flour,cause that is one of my exceptions this month, as is baking soda. Orange Rice Muffins 2 cups of rice flour 1/2 teaspoon baking soda 2 teaspoons lemon juice 1 egg 1/4 cup of melted butter 1 cup orange juice 1/2 cup grated apple
Set oven to 400. Mix flour and baking soda together.(Do a good job here.) In another bowl mix lemon juice, egg, butter& orange juice. Combine the 2 mixtures, till just moist. Mix in the grated apple. Spoon into buttered muffin cups. Bake approx.25-30 minutes. Makes 12 muffins.
